Preparation: 10 Minutes
Cooking: nil, but standing time at least 1 hr in fridge
Method:
- In a saucepan melt and combine the condensed milk and butter, stirring over a low heat until the butter has melted.
- Crush the biscuits finely and add the lemon rind and coconut
- Add the wet mixture to the biscuit crumb mixture and mix with your hand
- Place into a greased tray about 25-30 cm x 18-20cm.
- Place in fridge for at least 1 hour.
- Then ice with the icing mixture and sprinkle with a little coconut.
- When the icing has set cut into slices/squares.
